RECIPE; Zucchini Pasta: Gluten, Wheat, Dairy, Egg, Soy Free

Zucchini Pasta
Gluten free
Wheat free
Dairy free
Egg free
Soy free

Ingredients:
1 Packet of coles gluten free spaghetti OR Aldi gluten free spaghetti (this is a larger packet however so only use about 3/4 of it) I actually prefer the Aldi gluten free pasta. The coles one tends to only be suitable to cook al dente and it still tends to go a bit gluggy and make a mess. http://shop.coles.com.au/online/national/coles-simply-gluten-free-pasta-spaghetti / https://www.aldi.com.au/en/groceries/gluten-free/has-no-detail/ps/p/spaghetti-500g/

1/2 cup chopped fresh basil
1/4 cup chopped mint
Juice of 1 lemon
1 Avocado
4 rashers diced bacon – I used Woolworths own brand;
3 large zucchinis grated

Method:
Cook spaghetti according to the packet.

Cook the bacon and add the grated zucchini. I don’t even use any oil as the bacon has enough fat to cook the zucchini, cook it on low and add the lid, let the zucchini steam until cooked. Add the juice of lemon, avocado, basil and mint. Mash the avocado into the mixture with a spatula.

Pour spaghetti through colander and add spaghetti to the mix then serve 🙂

The whole family love this dinner, especially my little man.

If anyone in the family can have dairy then I must admit a hint of parmesan on this really tops it off.. I don’t have it though 🙂
