RECIPE quick and easy Dairy, Egg, Soy, Wheat & Gluten free chicken nuggets
Today has been hectic lots of running around doing a zillion things so I had to whip up a quick dinner with bubba who isn’t feeling 100% and clinging like a koala to a tree so I made chicken nuggets and steamed veggies.
It doesn’t look that appetising, but they are a more healthier version of nuggets, the kids absolutely love them, I think they are pretty yum too 🙂 They are also really easy and cheap to make!
Gluten free breadcrumbs are expensive like $8 or so a pack and guess what – they have dairy in them! However it occured to me, most of them say the ingredients are just rice flour.. argh what.. so what am I paying $8 for then?

1. Dice chicken breast – I use about 500g for 2 adults 1 child or 650g for 2 adults 2 children and there is plenty
2. Coat pieces in equivalent of about 4 “eggs” using orgran no egg egg replacer: https://shop.coles.com.au/online/national/orgran–no-egg-egg-replacer
2. Coat pieces in rice flour
3. Shallow fry in safe oil*. You could even bake in the oven if preferable.
*Safe oil- be careful to check that there is no soy in the oil. Vegetable oils contain soy. Coconut oil is preferable or canola oil as you are not meant to shallow fry with olive oil.
