When you have a tonne of overripe bananas, it’s time to get baking. This is one of my best banana breads I’ve ever made:
260grams gluten free self raising flour (I used Woolworths own brand)
1 teaspoon of cinnamon or cinnamon sugar
130grams brown sugar
The equivalent of 2 eggs using orgran no egg, egg replacement
50grams nuttelex
1/2 cup rice milk (or other milk of your choice)
2 mashed overripe bananas
1. Mix all ingredients together in a mix master for 2minutes
2. Line a loaf tin with baking paper
3. Bake at 160 degrees for 45 minutes – keep an eye on it as my oven might be different to yours 🙂
