Recipe; ginger chicken meatballs

1 cup of cooked rice
1/2 cup chopped fresh coriander leaves
1/2 cup coles own brand sweet chilli sauce
1/2 cup rice flour
Equivalent of 1 egg using Orgran No Egg, Egg replacer–no-egg-egg-replacer
500grams chicken breast
Small piece of ginger
1 glove garlic
2 shallots – sliced

1. Cook rice using rice cooker or using the instructions on the packet
2. Add all of the ingredients into a food processor and proces until mixed together
3. Roll into meatballs
4. Either shallow pan fry in an allergy safe oil or bake on a tray using baking paper at 180 degrees for approximately 30 minutes – keep an eye on them

Serve with sweet chilli sauce
