Christmas pudding (dairy,egg,soy,gluten & wheat free)

225 grams pitted dates
250 grams dried apricots
150 grams almond meal or ground almonds
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1. Combine all of the above ingredients EXCEPT the orange into your food processor – use a grater to grate all of the orange peel as zest into the mixture then food process until it turns into a fine crumb mix.
2.Squeeze approx 2-3 tablespoons of the orange juice into the mixture until the mixture will easily fold together with your hands.
3. Line a pudding dish with cling wrap and pour mixture in and push it in.
4. Invert the pudding onto a serving platter or if you intend to eat later, invert to some alumium foil, wrap and place in the fridge. Can be kept for up to 2 weeks.
