Recipe; Zucchini & Carrot rissole/meatballs – Dairy,egg,soy,wheat & gluten free

These are really quick & easy – I love making things with a small amount of ingredients, and ingredients that you already have!! They are tasty too and a good way of getting some extra veggies in.

Ingredients:
500grams mince (your choice of beef/pork/chicken/turkey)
1 large carrot
1 large zucchini
1/4 cup tomato sauce note: some contain soy – I have found coles own brand and masterfoods are ok and the ones we tend to use: https://shop.coles.com.au/a/a-nsw-metro-west-gosford/product/coles-sauce-tomato-squeezy
1 tablespoon Masterfoods dijon mustard: https://shop.coles.com.au/a/a-nsw-metro-west-gosford/product/masterfoods-mustard-dijon

Method:
1. Add all the above ingredients to the food processor, blitz for 1 minute until thoroughly mixed.

2. Make small balls using a heaped tablespoon.

3. Shallow fry with olive or coconut oil until cooked be careful to cook on a slow-medium temp as the water from the zucchini mixed into the water can spit if you cook them too fast.
